RB doesn’t like to see anything go to waste in the kitchen so when he heard that he could grow carrot tops in a saucer of water he thought he’d give it a whirl. Easy stuff, just cut the top of your carrots like you would normally but instead of getting rid of them put them into a saucer with a little bit of water and leave them on a sunny windowsill. Make sure they don’t dry out and in a week or two BINGO green bushy carrot tops! Hurrah! But what to do with them? Apparently rabbits like to eat them raw but if you don’t know any rabbits why not try making them into a yummy pesto?

Ingredients (makes enough for one human sized portion)
A small pawful of fresh carrot tops (washed of course)
Similar amount of either fresh or frozen spinach (we didn’t have fresh so we used frozen)
A slightly larger pawful of salted cashews or peanuts
A big clove of fresh garlic
Olive oil

Method
Chop up the carrot tops and spinach roughly and put into a bowl or jug.

Crush and add the garlic and then the nuts.
Pour in a tablespoon of olive oil and mix together with an electric blender.
Add more oil if it looks a little dry.

Once all the ingredients are mixed well together cook up some pasta and mix in the pesto, RB has also added some nutritional yeast flakes (which sound weird but taste yummy) and fried mushrooms to his, super tasty times!

Simple, quick and yummy (might be healthy too, RB doesn’t really know he’s never studied nutrition).
